Description
Quick and healthy burritos filled with black beans, spinach, and cheese, perfect for any meal of the day.
Ingredients

- 1 tablespoon olive oil
- 2 cloves garlic (minced)
- 1 cup onion (diced)
- 1 1/2 cups black beans (canned, drained)
- 1 1/2 cups corn (canned, drained)
- 1 1/2 cups spinach (packed, approximately 2–3 oz)
- 1 1/4 – 1 1/2 cups finely shredded cheese (cheddar, or pepper jack, Monterey jack, or a mixture)
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 2 large flour tortillas
Instructions
- Heat the olive oil in a sauté pan over medium heat. Add the minced garlic and diced onion, sauté for 1-2 minutes until fragrant and translucent.
- Roughly chop the spinach and add it to the pan. Sauté for another 1-2 minutes until the spinach wilts.
- Stir in the black beans and corn, cooking for about 5-6 minutes until everything is heated through.
- Lower the heat, add the paprika, cumin, salt, and pepper. Mix well, then top with cheese and stir until melted.
- Place the tortillas on a plate, dampen a paper towel, place over the tortillas, and microwave for 20 seconds to steam.
- Take one tortilla, add 2-3 large scoops of the filling to the center. Fold in each side towards the center and roll from the bottom up.
- Enjoy with your favorite toppings!
Notes
For a spicier kick, add diced jalapeños or cayenne pepper to the filling.
