Description

Quick and delightful creamy coconut noodles with a rich coconut milk base, perfect for a speedy dinner or casual get-together.


Ingredients

  • 1 lb 5 oz Asian style noodles (rice, soba, ramen, udon, or lo mein)
  • 1 cup full-fat coconut milk
  • 1/4 cup tamari (or low sodium soy sauce)
  • 1/4 cup pure maple syrup
  • 1 tablespoon chili garlic paste (or chili paste of choice)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon white miso paste
  • 12 cloves garlic, grated
  • 1 teaspoon grated ginger
  • Salt, to taste

Instructions

  1. Cook the Noodles: For home-cooked noodles, prepare until al dente. Pre-packaged noodles can be added directly to the pan later.
  2. Prepare the Sauce: In a bowl, mix garlic, ginger, maple syrup, tamari, sesame oil, miso, chili paste, and salt. Whisk until combined, then add coconut milk and whisk until smooth.
  3. Combine and Steam: Heat a large pan over medium heat, add noodles, pour sauce over them, cover with a lid.
  4. Cook Until Thickened: Stir occasionally for 7-10 minutes until sauce thickens and noodles are warmed.
  5. Garnish and Serve: Top with scallions and sesame seeds if desired. Let cool slightly before serving.

Notes

For fresh flavors, use fresh garlic and ginger. Adjust chili paste to taste.
