Ingredients

- 2 carrots, diced
- 1 zucchini, diced
- 2 celery stalks, diced
- 2 cups kale, chopped
- 1 tablespoon olive oil
- 1 teaspoon turmeric
- 1 teaspoon ginger, grated
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced carrots, zucchini, and celery. Sauté for about 5-7 minutes until softened.
- Stir in turmeric and ginger and cook for an additional minute.
- Pour in vegetable broth and bring the mixture to a boil.
- Add chopped kale and reduce heat. Simmer for 15-20 minutes.
- Season with salt and pepper to taste.
- Serve warm.
