Ingredients

  • 1 zucchini, diced
  • 2 celery stalks, diced
  • 2 cups kale, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon turmeric

  • 4 cups vegetable broth

Instructions

  1. In a large pot, heat olive oil over medium heat.

  3. Stir in turmeric and ginger and cook for an additional minute.
  4. Pour in vegetable broth and bring the mixture to a boil.
