Description

Ingredients

  • 1 cup green or brown lentils
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, drizzle olive oil and sauté onions, carrots, and celery until soft (about 5 minutes).
  2. Add garlic, cumin, and turmeric; cook for another minute until fragrant.
  3. Stir in rinsed lentils and vegetable broth. Bring to a boil, then reduce heat to simmer for about 10 minutes.
  4. Let the mixture simmer for another 25 minutes or until lentils are tender but still hold their shape.
  5. Remove from heat and stir in freshly squeezed lemon juice; season with salt and pepper to taste.
  6. Serve hot in bowls alongside crusty bread or a fresh salad.

Notes

For added flavor, top the soup with fresh herbs or a drizzle of olive oil before serving.
