Description

A fun twist on traditional apple pie, these enchiladas combine baked apples with caramel sauce and are served warm with vanilla ice cream.


Ingredients

  • 6 large flour tortillas
  • 4 cups apples, peeled and sliced
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup all-purpose flour
  • 1/2 cup chopped pecans (optional)
  • 1 cup caramel sauce
  • 1 cup vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the sliced apples, brown sugar, cinnamon, and flour until combined.
  3. Lay a tortilla flat on a clean surface and place a generous scoop of the apple mixture in the middle.
  4. Roll the tortilla up tightly around the apple mixture. Repeat with the remaining tortillas.
  5. Place the rolled enchiladas seam side down in a greased baking dish.
  6. Drizzle caramel sauce over the top of the enchiladas.
  7. Bake for 25-30 minutes, or until bubbly and golden.
  8. Serve warm with a scoop of vanilla ice cream on top.

Notes

Use a mix of sweet and tart apples for a more complex flavor. Prepare the apple mixture ahead of time and assemble the enchiladas just before baking.
