Description
A fun twist on traditional apple pie, these enchiladas combine baked apples with caramel sauce and are served warm with vanilla ice cream.

- 6 large flour tortillas
- 4 cups apples, peeled and sliced
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 cup all-purpose flour
- 1/2 cup chopped pecans (optional)
- 1 cup caramel sauce
- 1 cup vanilla ice cream (for serving)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the sliced apples, brown sugar, cinnamon, and flour until combined.
- Lay a tortilla flat on a clean surface and place a generous scoop of the apple mixture in the middle.
- Roll the tortilla up tightly around the apple mixture. Repeat with the remaining tortillas.
- Place the rolled enchiladas seam side down in a greased baking dish.
- Drizzle caramel sauce over the top of the enchiladas.
- Bake for 25-30 minutes, or until bubbly and golden.
- Serve warm with a scoop of vanilla ice cream on top.
Notes
Use a mix of sweet and tart apples for a more complex flavor. Prepare the apple mixture ahead of time and assemble the enchiladas just before baking.
