Description

A delightful blend of sweet apples and tart rhubarb, perfect for breakfast or dessert.


Ingredients

Scale
  • 4 cups Rhubarb, chopped
  • 2 cups Apples, peeled and chopped
  • 1 cup Sugar
  • 1/4 cup Water
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Lemon juice

Instructions

  1. Combine the chopped rhubarb, apples, sugar, and water in a large saucepan.
  2. Bring to a boil over medium heat, stirring occasionally.
  3. Reduce the heat and let it simmer for about 15-20 minutes until soft.
  4. Stir in the vanilla extract and lemon juice.
  5. Remove from heat and let it cool before serving.

Notes

Serve over yogurt, pancakes, or use as a filling for pastries. Can be stored in the fridge for up to a week.
