- 4 cups Rhubarb, chopped
- 2 cups Apples, peeled and chopped
- 1 cup Sugar
- 1/4 cup Water
- 1 teaspoon Vanilla extract
- 1 tablespoon Lemon juice
Instructions
- Combine the chopped rhubarb, apples, sugar, and water in a large saucepan.
- Bring to a boil over medium heat, stirring occasionally.
- Reduce the heat and let it simmer for about 15-20 minutes until soft.
- Stir in the vanilla extract and lemon juice.
- Remove from heat and let it cool before serving.
Notes
Serve over yogurt, pancakes, or use as a filling for pastries. Can be stored in the fridge for up to a week.
