Ingredients

  • 1 cup shredded carrots
  • 1 cup chopped cucumber
  • 1 red bell pepper, diced
  • 1 cup bean sprouts
  • 1/4 cup green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated ginger
  • 1 teaspoon garlic, minced
  • Sesame seeds for garnish

Instructions

  1. In a large bowl, combine the cooked rice, shredded carrots, cucumber, red bell pepper, bean sprouts, green onions, and cilantro. Toss to mix evenly.
  2. In a separate bowl, whisk together the peanut butter, soy sauce, sesame oil, rice vinegar, honey or maple syrup, ginger, and garlic until smooth.
  3. Pour the dressing over the salad and mix well to combine.
  4. Garnish with sesame seeds before serving. Enjoy immediately or refrigerate for later.
