- 2 cups cooked rice
- 1 cup shredded carrots
- 1 cup chopped cucumber
- 1 red bell pepper, diced
- 1 cup bean sprouts
- 1/4 cup green onions, sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon grated ginger
- 1 teaspoon garlic, minced
- Sesame seeds for garnish
Instructions
- In a large bowl, combine the cooked rice, shredded carrots, cucumber, red bell pepper, bean sprouts, green onions, and cilantro. Toss to mix evenly.
- In a separate bowl, whisk together the peanut butter, soy sauce, sesame oil, rice vinegar, honey or maple syrup, ginger, and garlic until smooth.
- Pour the dressing over the salad and mix well to combine.
- Garnish with sesame seeds before serving. Enjoy immediately or refrigerate for later.
Notes
Use day-old rice for a firmer texture and always opt for the freshest veggies. Keep dressing separate if making ahead.
