Description

This Asparagus & Eggs Breakfast Skillet is a delightful dish that combines fresh asparagus, soft-cooked eggs, and sautéed garlic and leeks, delivering a satisfying mix of flavors and textures.


Ingredients

  • 2 Tbsp olive oil
  • 2 large cloves garlic, minced
  • 1 leek, sliced into 1/4-inch rounds
  • 1/4 cup green onion, diced
  • 1.25 cups small potatoes, quartered (skin on)
  • 10 spears asparagus, cut into thirds (medium thickness)
  • 1 cup green peas (fresh or frozen)
  • 4 large eggs
  • 2 Tbsp feta cheese, crumbled (or more as desired)
  • Salt + pepper, to taste

Instructions

  1. Prep: Wash and chop all veggies before you start cooking. This includes removing the woody ends off the asparagus spears and cutting the remainder of each spear into thirds. Quarter the small potatoes. Slice the leek into roughly 1/4-inch rounds (discarding the bottom bulb). Mince the garlic.
  2. Cooking Aromatics: Next, heat olive oil over medium-high in a large skillet. Cook minced garlic, leeks, and green onion for a couple of minutes while stirring consistently until fragrant.
  3. Add Potatoes: Incorporate the cut potatoes into the pan and cook for about 10 minutes. Make sure to stir frequently to prevent sticking and ensure even cooking.
  4. Add Vegetables: Add in asparagus spears and green peas (there’s no need to thaw them if frozen). Season lightly with salt and pepper. Continue to cook for about 5 minutes, stirring frequently.
  5. Add Eggs: Using the back of your spatula, create 4 wells or spaces within the veggie mix. Crack an egg into each well and sprinkle feta cheese over everything.
  6. Cooking the Eggs: Cover the pan with a lid and let it cook until the egg whites are set, about 5-7 minutes.
  7. Serve: Remove from heat and serve immediately. Feel free to garnish with more green onion and black pepper for a fresh finish!

Notes

Choose fresh asparagus for the best flavor. Can substitute eggs with silken tofu for a vegan version.
