- 2 cups cooked chicken breasts, shredded
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 1/4 cup diced onions
- 1/4 cup diced bell peppers
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat a skillet over medium heat and add a little olive oil.
- Combine the shredded chicken, cheese, onions, bell peppers, garlic powder, cumin, and season with salt and pepper in a bowl.
- Place one tortilla in the skillet and add a portion of the chicken mixture on one half, then fold the tortilla over.
- Cook for 3-4 minutes on each side until golden brown and cheese has melted.
- Repeat the process with remaining tortillas and filling.
- Cut the quesadilla into wedges and serve immediately.
