Description

Prepare a warm, cheesy chicken quesadilla filled with tender chicken, gooey cheese, and spices, all enclosed in a crispy tortilla. Perfect for any occasion!


Ingredients

  • 2 Chicken breasts, cooked and shredded
  • 4 Flour tortillas
  • 2 cups Shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup Diced bell peppers
  • 1/2 cup Diced onions
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • Salt and pepper to taste
  • Oil for cooking, as needed

Instructions

  1. Heat a skillet over medium heat and add a little oil.
  2. Sauté the onions and bell peppers until soft, about 3-5 minutes.
  3. Add the shredded chicken, cumin, chili powder, salt, and pepper to the skillet and mix well.
  4. Sprinkle cheese on one half of a tortilla, add the chicken mixture, and top with more cheese.
  5. Fold the tortilla and cook in the skillet until golden brown, about 3-4 minutes per side.
  6. Repeat with remaining ingredients.
  7. Slice the quesadilla into wedges and serve warm with salsa or guacamole.
