- 2 Chicken breasts, cooked and shredded
- 4 Flour tortillas
- 2 cups Shredded cheese (cheddar or Monterey Jack)
- 1/2 cup Diced bell peppers
- 1/2 cup Diced onions
- 1 teaspoon Cumin
- 1 teaspoon Chili powder
- Salt and pepper to taste
- Oil for cooking, as needed
Instructions
- Heat a skillet over medium heat and add a little oil.
- Sauté the onions and bell peppers until soft, about 3-5 minutes.
- Add the shredded chicken, cumin, chili powder, salt, and pepper to the skillet and mix well.
- Sprinkle cheese on one half of a tortilla, add the chicken mixture, and top with more cheese.
- Fold the tortilla and cook in the skillet until golden brown, about 3-4 minutes per side.
- Repeat with remaining ingredients.
- Slice the quesadilla into wedges and serve warm with salsa or guacamole.
Notes
Use fresh ingredients for the best flavor. Avoid overstuffing to keep quesadillas easy to flip.
