Ingredients
- Chicken (cut into pieces)
- Onion (chopped)
- Garlic (minced)
- Hot peppers (sliced)
- Curry powder
- Chicken stock
- Coconut milk
- Salt
- Black pepper
- Vegetable oil
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add chopped onions and cook until translucent, about 2-3 minutes.
- Stir in minced garlic and sliced hot peppers.
- Add curry powder and cook for a minute to release aroma.
- Toss in chicken pieces and cook until browned on all sides.
- Pour in chicken stock and coconut milk, stirring to combine.
- Add salt and black pepper to taste.
- Bring to a boil, then reduce heat, cover, and let simmer for 30-40 minutes until chicken is cooked through and tender.
- Serve hot with rice.
Notes
For a spicier curry, use Scotch bonnet peppers. Garnish with fresh cilantro or green onions before serving.
