Description

A delightful blend of spices and tender chicken pieces simmered to perfection in a rich, creamy coconut milk sauce, perfect for dinner or gatherings.


Ingredients

  • Chicken (cut into pieces)
  • Onion (chopped)
  • Garlic (minced)
  • Hot peppers (sliced)
  • Curry powder
  • Chicken stock
  • Coconut milk
  • Salt
  • Black pepper
  • Vegetable oil

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add chopped onions and cook until translucent, about 2-3 minutes.
  3. Stir in minced garlic and sliced hot peppers.
  4. Add curry powder and cook for a minute to release aroma.
  5. Toss in chicken pieces and cook until browned on all sides.
  6. Pour in chicken stock and coconut milk, stirring to combine.
  7. Add salt and black pepper to taste.
  8. Bring to a boil, then reduce heat, cover, and let simmer for 30-40 minutes until chicken is cooked through and tender.
  9. Serve hot with rice.

Notes

For a spicier curry, use Scotch bonnet peppers. Garnish with fresh cilantro or green onions before serving.
