- 2 pounds chicken, cut into pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon allspice
- 1 can coconut milk
- 2 cups chicken broth
- 1 bell pepper, chopped
- 2 carrots, sliced
- Salt and pepper to taste
- Fresh herbs (thyme, cilantro) for garnish
- Rice or festival dumplings for serving
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion, garlic, and ginger, sautéing until fragrant.
- Stir in the curry powder and allspice, cooking for another minute.
- Add the chicken pieces, browning them for about 5-7 minutes.
- Pour in the coconut milk and chicken broth, then add the bell pepper and carrots.
- Bring to a simmer and cook for 30-40 minutes, or until the chicken is tender.
- Season with salt and pepper to taste.
- Serve over rice or with festival dumplings, garnished with fresh herbs.
Notes
Use bone-in, skin-on chicken for the best flavor. Adjust spices according to your taste.
