Description

A comforting, creamy soup that combines crispy bacon, cheesy gnocchi, and rich flavors, perfect for any occasion.


Ingredients

  • 810 slices Bacon
  • 1 Tablespoon Butter or Olive Oil
  • 1 large Onion (diced)
  • 2 large Carrots (peeled and sliced)
  • 4 cups Chicken Broth
  • 12 teaspoons Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic Powder (or 4 cloves minced garlic)
  • 1/4 teaspoon Dried Thyme
  • 1/21 teaspoon Red Chili Flakes
  • 16 ounces Gnocchi
  • 2 cups Heavy Cream or Half-n-Half
  • 2 cups Cheddar Cheese (grated)

Instructions

  1. In a large pot, cook the bacon over medium heat until it’s crispy. Remove from the pot, leaving the drippings, and chop into bite-sized pieces.
  2. Add butter (or olive oil) to the pot with the bacon drippings and sauté the diced onion and sliced carrots until tender, about 5–7 minutes.
  3. Pour in the chicken broth followed by salt, pepper, garlic powder, thyme, and red chili flakes. Stir to combine and let simmer for about 10 minutes.
  4. Stir in the gnocchi and cook according to package instructions until they float to the top, usually around 2-3 minutes.
  5. Lower the heat and add the heavy cream and shredded cheddar cheese. Stir continuously until melted and well combined.
  6. Add the chopped bacon back into the pot, stir, and serve warm!

Notes

For a lighter soup, substitute half of the heavy cream with low-fat milk or adjust the broth to maintain flavor. Consider adding vegetables like spinach or peas for added nutrients.
