- 8–10 slices Bacon
- 1 Tablespoon Butter or Olive Oil
- 1 large Onion (diced)
- 2 large Carrots (peeled and sliced)
- 4 cups Chicken Broth
- 1–2 teaspoons Salt
- 1 teaspoon Pepper
- 1 teaspoon Garlic Powder (or 4 cloves minced garlic)
- 1/4 teaspoon Dried Thyme
- 1/2–1 teaspoon Red Chili Flakes
- 16 ounces Gnocchi
- 2 cups Heavy Cream or Half-n-Half
- 2 cups Cheddar Cheese (grated)
Instructions
- In a large pot, cook the bacon over medium heat until it’s crispy. Remove from the pot, leaving the drippings, and chop into bite-sized pieces.
- Add butter (or olive oil) to the pot with the bacon drippings and sauté the diced onion and sliced carrots until tender, about 5–7 minutes.
- Pour in the chicken broth followed by salt, pepper, garlic powder, thyme, and red chili flakes. Stir to combine and let simmer for about 10 minutes.
- Stir in the gnocchi and cook according to package instructions until they float to the top, usually around 2-3 minutes.
- Lower the heat and add the heavy cream and shredded cheddar cheese. Stir continuously until melted and well combined.
- Add the chopped bacon back into the pot, stir, and serve warm!
Notes
For a lighter soup, substitute half of the heavy cream with low-fat milk or adjust the broth to maintain flavor. Consider adding vegetables like spinach or peas for added nutrients.
