  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 (16 oz) package fresh gnocchi
  • 1 cup shredded sharp cheddar cheese
  • 2 cups fresh spinach (optional)

Instructions

  1. In a large pot over medium heat, cook the bacon until crispy (about 5-7 minutes). Remove with a slotted spoon and drain on paper towels.
  2. In the same pot, sauté diced onion and minced garlic in the rendered bacon fat until the onion is translucent (about 3-4 minutes).

  4. Add the fresh gnocchi and cook according to package instructions until they float.
