Instructions
- In a large pot over medium heat, cook the bacon until crispy (about 5-7 minutes). Remove with a slotted spoon and drain on paper towels.
- In the same pot, sauté diced onion and minced garlic in the rendered bacon fat until the onion is translucent (about 3-4 minutes).
- Pour in the chicken broth, stir to combine, and bring to a simmer. Then stir in the heavy cream.
- Add the fresh gnocchi and cook according to package instructions until they float.
- Stir in shredded cheddar cheese until melted and combine with the crispy bacon and spinach, if using. Serve hot.
