- 8–10 slices Bacon
- 1 Tablespoon Butter or Olive Oil
- 1 large Onion (diced)
- 2 large Carrots (peeled and sliced)
- 4 cups Chicken Broth
- 1–2 teaspoons Salt
- 1 teaspoon Pepper
- 1 teaspoon Garlic Powder (or 4 cloves minced garlic)
- 1/4 teaspoon Dried Thyme
- 1/2–1 teaspoon Red Chili Flakes
- 16 ounces Gnocchi
- 2 cups Heavy Cream or Half-n-Half
- 2 cups Cheddar Cheese (grated)
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove and drain on paper towels, leaving the bacon grease in the pot.
- Add butter or olive oil to the pot, followed by diced onions and sliced carrots. Sauté for about 5 minutes, or until the onions are translucent.
- Pour in the chicken broth; stir in salt, pepper, garlic powder, dried thyme, and red chili flakes. Bring to a simmer.
- Add gnocchi to the simmering broth. Allow it to cook for 3-4 minutes or until they float to the top.
- Stir in heavy cream and grated cheddar cheese, allowing the cheese to melt and the soup to become creamy.
- Chop the crispy bacon and add it back into the soup. Give everything a good stir, and it’s ready to enjoy!
Notes
For added flavor, consider toasting the thyme before adding any liquids. Store leftovers in an airtight container for up to 3 days in the fridge.
