Description

A comforting and indulgent soup with crispy bacon and creamy cheddar gnocchi, perfect for cozy nights.


Ingredients

  • 6 slices thick-cut bacon
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 (16 oz) package fresh gnocchi
  • 1 cup shredded sharp cheddar cheese
  • 2 cups fresh spinach (optional)

Instructions

  1. Cook bacon in a large pot over medium heat until crispy, about 5-7 minutes. Remove bacon and drain on paper towels.
  2. In the same pot, sauté diced onion and minced garlic in bacon fat until fragrant and translucent, about 3-4 minutes.
  3. Pour in chicken broth and bring to a gentle simmer. Stir in heavy cream until well combined.
  4. Add fresh gnocchi and cook as per package instructions, usually about 3 minutes, or until they float.
  5. Stir in shredded cheddar cheese until melted and smooth.
  6. Return crispy bacon to the pot and add spinach if desired. Serve hot.

Notes

For lighter soup, substitute half-and-half or whole milk for heavy cream. Use leftover bacon for added crunch before serving.
