- 6 slices thick-cut bacon
- 1 cup diced onion
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 (16 oz) package fresh gnocchi
- 1 cup shredded sharp cheddar cheese
- 2 cups fresh spinach (optional)
Instructions
- Cook bacon in a large pot over medium heat until crispy, about 5-7 minutes. Remove bacon and drain on paper towels.
- In the same pot, sauté diced onion and minced garlic in bacon fat until fragrant and translucent, about 3-4 minutes.
- Pour in chicken broth and bring to a gentle simmer. Stir in heavy cream until well combined.
- Add fresh gnocchi and cook as per package instructions, usually about 3 minutes, or until they float.
- Stir in shredded cheddar cheese until melted and smooth.
- Return crispy bacon to the pot and add spinach if desired. Serve hot.
Notes
For lighter soup, substitute half-and-half or whole milk for heavy cream. Use leftover bacon for added crunch before serving.
