- 6 slices thick-cut bacon
- 1 cup diced onion
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 (16 oz) package fresh gnocchi
- 1 cup shredded sharp cheddar cheese
- 2 cups fresh spinach (optional)
Instructions
- In a large pot over medium heat, cook the bacon until crispy. Remove and let drain on paper towels.
- In the same pot, use bacon fat to sauté onions and garlic until fragrant and translucent.
- Pour in the chicken broth and bring to a simmer. Stir in heavy cream until well combined.
- Add the gnocchi and cook until they float, about 3 minutes.
- Stir in shredded cheddar cheese until melted and smooth. Adjust seasonings as needed.
- Return crispy bacon to the pot and mix in spinach if desired. Serve hot with crusty bread.
Notes
Use thick-cut bacon for richer flavor and adjust cream for a lighter version. Substitute chicken broth for vegetable broth for a vegetarian option.
