Description

Ingredients

  • 6 slices thick-cut bacon
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 (16 oz) package fresh gnocchi
  • 1 cup shredded sharp cheddar cheese
  • 2 cups fresh spinach (optional)

Instructions

  1. In a large pot over medium heat, cook the bacon until crispy. Remove and let drain on paper towels.
  2. In the same pot, use bacon fat to sauté onions and garlic until fragrant and translucent.
  3. Pour in the chicken broth and bring to a simmer. Stir in heavy cream until well combined.
  4. Add the gnocchi and cook until they float, about 3 minutes.
  5. Stir in shredded cheddar cheese until melted and smooth. Adjust seasonings as needed.
  6. Return crispy bacon to the pot and mix in spinach if desired. Serve hot with crusty bread.

Notes

Use thick-cut bacon for richer flavor and adjust cream for a lighter version. Substitute chicken broth for vegetable broth for a vegetarian option.
