Description

These chewy sugar cookies are sweet, soft, and slightly crispy at the edges, making them a delightful treat for any occasion.


Ingredients

  • 2 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/3 cup white sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/3 cup white sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. Mix together the flour, cornstarch, baking soda, and salt in a medium bowl.
  3. Beat the butter and 1 1/3 cup of sugar together until light and fluffy.
  4. Add the egg, egg yolk, vanilla extract, and almond extract, mixing until well combined.
  5. Gradually mix the flour mixture into the butter-sugar mixture until just combined.
  6. Roll dough into tablespoon-sized balls, coat in the remaining sugar, and place on prepared sheets.
  7. Bake for 8 to 10 minutes until tops look set.
  8. Cool on the baking sheet for 10 minutes before transferring to a wire rack.

Notes

Use room temperature butter for best results. You can chill the dough for thicker cookies if desired.
