- 1/4 cup cornstarch
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/3 cup white sugar
- 1 large egg
- 1 egg yolk
- 2 teaspoon vanilla extract
- 1/2 teaspoon almond extract (optional)
- 1/3 cup white sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
- Mix together the flour, cornstarch, baking soda, and salt in a medium bowl.
- Beat the butter and 1 1/3 cup of sugar together until light and fluffy.
- Add the egg, egg yolk, vanilla extract, and almond extract, mixing until well combined.
- Gradually mix the flour mixture into the butter-sugar mixture until just combined.
- Roll dough into tablespoon-sized balls, coat in the remaining sugar, and place on prepared sheets.
- Bake for 8 to 10 minutes until tops look set.
- Cool on the baking sheet for 10 minutes before transferring to a wire rack.
Notes
Use room temperature butter for best results. You can chill the dough for thicker cookies if desired.
