Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the ingredients by dicing the chicken, chopping the zucchinis, dicing the onion, and mincing the garlic.
- In a large bowl, combine chicken, zucchini, onion, garlic, olive oil, Italian seasoning, paprika, salt, and pepper. Toss to coat.
- Spread the mixture evenly across the prepared baking sheet.
- Roast in the oven for 25-30 minutes, until chicken is 165°F and zucchini is tender.
- Broil for an additional 2-3 minutes for added browning.
- Sprinkle with fresh parsley before serving and enjoy hot.
