Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup buttermilk
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 cups panko breadcrumbs
  • 1/4 cup olive oil
  • 1/2 cup honey
  • 2 tablespoons hot sauce
  • 1 teaspoon red pepper flakes

Instructions

  1. Marinate the chicken in buttermilk for at least an hour or overnight.
  2. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Mix flour, garlic powder, onion powder, smoked paprika, salt, and pepper in a shallow dish. In another dish, combine panko breadcrumbs, baking powder, and olive oil.
  4. Dredge each chicken thigh in the flour mixture, dip back in buttermilk, then coat with the breadcrumb mixture.
  5. Place the coated chicken on the baking sheet and spray or drizzle with olive oil. Bake for 25-30 minutes, flipping halfway through, until golden brown and cooked through.
  6. In a saucepan, heat honey until it bubbles, then stir in hot sauce and red pepper flakes for the glaze.
  7. Drizzle the hot honey glaze over the baked chicken and serve hot.

Notes

For extra tenderness, marinate chicken longer. Ensure breadcrumbs are well-oiled for maximum crunch.
