- 4 boneless, skinless chicken thighs
- 1 cup buttermilk
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 2 cups panko breadcrumbs
- 1/4 cup olive oil
- 1/2 cup honey
- 2 tablespoons hot sauce
- 1 teaspoon red pepper flakes
Instructions
- Marinate the chicken in buttermilk for at least an hour or overnight.
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Mix flour, garlic powder, onion powder, smoked paprika, salt, and pepper in a shallow dish. In another dish, combine panko breadcrumbs, baking powder, and olive oil.
- Dredge each chicken thigh in the flour mixture, dip back in buttermilk, then coat with the breadcrumb mixture.
- Place the coated chicken on the baking sheet and spray or drizzle with olive oil. Bake for 25-30 minutes, flipping halfway through, until golden brown and cooked through.
- In a saucepan, heat honey until it bubbles, then stir in hot sauce and red pepper flakes for the glaze.
- Drizzle the hot honey glaze over the baked chicken and serve hot.
Notes
For extra tenderness, marinate chicken longer. Ensure breadcrumbs are well-oiled for maximum crunch.
