Description

A delightful mix of flavors and textures featuring succulent baked chicken, creamy mozzarella, fresh avocado, and cherry tomatoes, all tied together with a homemade balsamic vinaigrette.

Ingredients

Scale
  • 2 chicken breasts
  • 1 cup mozzarella balls
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 4 cups baby spinach
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • Salt, to taste
  • Pepper, to taste
  • 2 cloves garlic, minced
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, and minced garlic. Bake for 25-30 minutes or until cooked through.
  3. Whisk together balsamic vinegar, olive oil, salt, pepper, and honey (if using) to create the vinaigrette.
  4. Let the chicken rest for a few minutes before slicing.
  5. Combine baby spinach, sliced avocado, halved cherry tomatoes, and mozzarella balls in a large salad bowl.
  6. Top with sliced chicken, drizzle with balsamic vinaigrette, and toss gently to combine.
  7. Serve immediately or store in the fridge for meal prep.

Notes

For juicier chicken, use evenly sized pieces and let it rest before slicing. Customize the vinaigrette to your liking.
