Description

Delightful and crispy rhubarb fritters with a perfect balance of sweetness and tanginess, ideal for breakfast or dessert.


Ingredients

  • 2 cups Rhubarb, chopped
  • 1 cup All-purpose flour
  • 1/2 cup Sugar
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Cinnamon
  • 1 Egg
  • 1/2 cup Milk
  • 1 teaspoon Vanilla extract
  • Oil for frying (as needed)
  • Powdered sugar for dusting (optional, as needed)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the flour, sugar, baking powder, baking soda, salt, and cinnamon in a mixing bowl.
  3. Whisk together the egg, milk, and vanilla extract in another bowl.
  4. Add the wet ingredients to the dry ingredients and mix until just combined; gently fold in the rhubarb.
  5. Heat oil in a frying pan over medium heat. Drop spoonfuls of the fritter batter into the hot oil, cooking until golden brown on both sides, around 2-3 minutes per side.
  6. Remove the fritters from the oil and place them on paper towels to drain excess oil.
  7. Dust with powdered sugar if desired and serve warm.

Notes

Chill the batter for about 15 minutes for a fluffier texture. Use fresh rhubarb for better flavor.
