- 2 cups Rhubarb, chopped
- 1 cup All-purpose flour
- 1/2 cup Sugar
- 1 teaspoon Baking powder
- 1/2 teaspoon Baking soda
- 1/4 teaspoon Salt
- 1/2 teaspoon Cinnamon
- 1 Egg
- 1/2 cup Milk
- 1 teaspoon Vanilla extract
- Oil for frying (as needed)
- Powdered sugar for dusting (optional, as needed)
Instructions
- Preheat the oven to 375°F (190°C).
- Combine the flour, sugar, baking powder, baking soda, salt, and cinnamon in a mixing bowl.
- Whisk together the egg, milk, and vanilla extract in another bowl.
- Add the wet ingredients to the dry ingredients and mix until just combined; gently fold in the rhubarb.
- Heat oil in a frying pan over medium heat. Drop spoonfuls of the fritter batter into the hot oil, cooking until golden brown on both sides, around 2-3 minutes per side.
- Remove the fritters from the oil and place them on paper towels to drain excess oil.
- Dust with powdered sugar if desired and serve warm.
Notes
Chill the batter for about 15 minutes for a fluffier texture. Use fresh rhubarb for better flavor.
