A hearty and comforting baked pasta dish featuring rigatoni smothered in marinara sauce, creamy ricotta, and fresh spinach, topped with melted mozzarella.

- 1 pound rigatoni pasta
- 3 cups marinara sauce
- 15 ounces ricotta cheese
- 2 cups fresh spinach
- 2 cups mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the rigatoni according to package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add the spinach to the skillet and cook until it wilts.
- In a bowl, mix the ricotta cheese with salt, pepper, and Italian seasoning.
- In a large baking dish, layer marinara sauce on the bottom, then half of the rigatoni, half of the ricotta mixture, half of the spinach, and half of the mozzarella cheese.
- Repeat the layers, finishing with a final layer of marinara and the remaining mozzarella cheese.
- Sprinkle parmesan cheese on top.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until bubbling and golden.
- Let it cool for a few minutes before serving.
Notes
Allowing the dish to rest for a bit after baking helps it set and makes serving easier.
