Description

A hearty and comforting baked pasta dish featuring rigatoni smothered in marinara sauce, creamy ricotta, and fresh spinach, topped with melted mozzarella.


Ingredients

  • 1 pound rigatoni pasta
  • 3 cups marinara sauce
  • 15 ounces ricotta cheese
  • 2 cups fresh spinach
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the rigatoni according to package instructions until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  4. Add the spinach to the skillet and cook until it wilts.
  5. In a bowl, mix the ricotta cheese with salt, pepper, and Italian seasoning.
  6. In a large baking dish, layer marinara sauce on the bottom, then half of the rigatoni, half of the ricotta mixture, half of the spinach, and half of the mozzarella cheese.
  7. Repeat the layers, finishing with a final layer of marinara and the remaining mozzarella cheese.
  8. Sprinkle parmesan cheese on top.
  9. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until bubbling and golden.
  10. Let it cool for a few minutes before serving.

Notes

Allowing the dish to rest for a bit after baking helps it set and makes serving easier.
