- 12 oz rigatoni pasta
- 3 cups marinara sauce
- 15 oz ricotta cheese
- 2 cups fresh spinach
- 1.5 cups mozzarella cheese, shredded
- 0.5 cup Parmesan cheese, grated
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the rigatoni according to the package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add the fresh spinach, cooking until it’s wilted.
- In a separate bowl, mix ricotta cheese with salt, pepper, and Italian seasoning.
- In a large baking dish, layer marinara sauce on the bottom. Add half of the rigatoni, followed by half of the ricotta mixture, half of the spinach, and half of the mozzarella cheese.
- Repeat these layers, finishing with remaining marinara and mozzarella on top.
- Sprinkle Parmesan cheese on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until bubbling and golden.
- Let cool for a few minutes before serving.
