Crispy, golden, and flavorful, these Baked Smashed Potatoes With Garlic & Parmesan are the perfect side dish for any meal.
Ingredients
1 lb baby potatoes (Yukon Gold or red)
2 tbsp olive oil
2 tbsp melted butter
3 cloves garlic (minced)
1/3 cup grated parmesan cheese
1 tsp salt
1/2 tsp black pepper
Fresh parsley or chives for garnish
Instructions
1. Preheat oven to 425°F (220°C).
2. Boil baby potatoes in salted water until fork-tender.
3. Drain and let potatoes air dry for a few minutes.
4. Place potatoes on a baking sheet lined with parchment paper.
5. Use a flat-bottomed glass or masher to gently smash each potato.
6. Brush with olive oil and melted butter.
7. Sprinkle with minced garlic, salt, pepper, and parmesan cheese.
8. Bake for 20–25 minutes, until golden and crispy.
9. Garnish with fresh parsley or chives before serving.
Notes
For an extra crispy finish, broil the potatoes for 2–3 minutes at the end of baking.
Use roasted garlic for a milder flavor.
