- 1 pound Ziti Pasta
- ½ cup Olive Oil
- 4 cups Assorted Vegetables, chopped
- 4 cloves Garlic, minced
- 2 tablespoons Dried Italian Herbs
- 2 teaspoons Salt, or to taste
- 1 teaspoon Black Pepper, or to taste
- 3 cups Marinara Sauce
- 15 ounces Ricotta Cheese
- 1 cup Parmesan Cheese, grated
- 2 cups Mozzarella Cheese, shredded
- ¼ cup Fresh Basil, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). While preheating, wash and chop your vegetables into uniform, bite-sized pieces.
- Toss the vegetables in olive oil and seasoning. In a large bowl, mix your chopped vegetables with olive oil, minced garlic, dried herbs, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes.
- While the vegetables are roasting, cook your ziti in a pot of salted boiling water until al dente. Drain well.
- In a large bowl, mix the cooked ziti with the roasted vegetables.
- In another bowl, mix together the marinara sauce, ricotta cheese, and half of the Parmesan cheese until smooth.
- Combine the sauce mixture with the pasta and vegetables. Transfer this mixture to a 9×13 inch baking dish.
- Sprinkle the shredded mozzarella and remaining Parmesan evenly over the pasta mixture.
- Bake for 20-25 minutes until bubbly and golden. Broil for an additional 1-2 minutes for a crunchier top if desired.
- Let it rest for 5-10 minutes before serving. Garnish with fresh basil.
