Description

A delicious, filling bowl featuring tender chicken, vibrant vegetables, and a creamy, spicy sauce.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups cooked rice (white or brown)
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 3 green onions, chopped
  • ½ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce (adjust for spice level)
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 2 tablespoons oil (for cooking)
  • Sesame seeds (for garnishing)

Instructions

  1. Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  2. Heat oil in a skillet over medium heat and cook the chicken until golden brown, about 5-7 minutes. Remove and set aside.
  3. Sauté broccoli, red bell pepper, and carrot in the same skillet for about 3-5 minutes.
  4. Combine mayonnaise, sweet chili sauce, Sriracha, and soy sauce in a bowl to make the sauce.
  5. Return the chicken to the skillet with the vegetables, add the sauce, and stir until evenly coated.
  6. Serve on a layer of cooked rice and garnish with green onions and sesame seeds.
