Description

Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 3 tablespoons Bang Bang sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons green onions, chopped
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add mixed vegetables and cook until tender, about 3-4 minutes.
  3. Push the vegetables to one side of the skillet and pour in the beaten eggs on the other side. Scramble the eggs until cooked through.
  4. Add the cooked chicken and rice to the skillet, mixing everything together.
  5. Pour in the Bang Bang sauce and soy sauce, stirring to coat all ingredients evenly.
  6. Season with salt and pepper to taste, and cook for an additional 2-3 minutes until heated through.
  7. Garnish with chopped green onions before serving.
