- 1 cup cooked chicken, diced
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 3 tablespoons Bang Bang sauce
- 2 tablespoons soy sauce
- 2 tablespoons green onions, chopped
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add mixed vegetables and cook until tender, about 3-4 minutes.
- Push the vegetables to one side of the skillet and pour in the beaten eggs on the other side. Scramble the eggs until cooked through.
- Add the cooked chicken and rice to the skillet, mixing everything together.
- Pour in the Bang Bang sauce and soy sauce, stirring to coat all ingredients evenly.
- Season with salt and pepper to taste, and cook for an additional 2-3 minutes until heated through.
- Garnish with chopped green onions before serving.
Notes
Use day-old rice for better texture and consider customizing the protein. Adjust the heat level of the Bang Bang sauce to your preference.
