- 1 cup diced chicken
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 3 tablespoons Bang Bang sauce
- 2 tablespoons soy sauce
- 2 tablespoons oil
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Heat oil in a large pan over medium heat. Add the diced chicken and cook until golden brown.
- Push the chicken to the side and pour in the beaten eggs, scrambling until fully cooked.
- Add the mixed vegetables and cook for a few minutes until soft.
- Stir in the cooked rice and mix well to heat evenly.
- Add the Bang Bang sauce and soy sauce, stirring until well combined and heated through.
- Season with salt and pepper, and garnish with green onions before serving.
