- 1 lb ground turkey
- 2 cups cooked jasmine rice
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha sauce
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 cup chopped red bell pepper
- 1 cup chopped carrots
- 1 cup chopped broccoli
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Cook jasmine rice according to package instructions.
- In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, and lime juice to create the bang bang sauce. Set aside.
- Heat a large skillet over medium-high heat, add olive oil.
- Add ground turkey to the skillet, breaking apart with a spoon, and cook until browned.
- Stir in soy sauce, salt, and pepper.
- Toss in chopped red bell pepper, carrots, and broccoli; cook for 5-7 minutes until tender-crisp.
- Remove from heat and mix in half of the bang bang sauce.
- Scoop cooked jasmine rice into bowls, top with the turkey and vegetable mixture, and drizzle remaining bang bang sauce.
- Garnish with sliced green onions and sesame seeds.
- Serve immediately and enjoy!
Notes
For meal prep, cook turkey and veggies separately from rice. Use fresh veggies for better flavor.
