An exciting and satisfying dish that combines juicy meatballs with creamy avocado sauce, roasted vegetables, and a hearty base of quinoa or brown rice.

- 1 lb ground sirloin or lean ground beef
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- ½ tsp sea salt
- Freshly ground black pepper
- 1 large egg
- â…“ cup Panko breadcrumbs
- 1 tbsp dried basil
- 2 tsp smoked paprika
- 1 tsp dried oregano
- 1 garlic clove, minced
- â…” cup barbecue sauce
- 1 tbsp balsamic vinegar
- 1 tbsp tamari
- 3 tbsp water
- 4 medium sweet potatoes, peeled & cubed
- 1 bunch broccoli, cut into florets
- 4 tbsp extra-virgin olive oil
- Sea salt & pepper
- 1 ripe avocado
- ½ cup Greek yogurt
- Juice of 1 lime
- 1 garlic clove, minced
- ½ tsp sea salt
- Big handful fresh herbs (basil + dill recommended)
- 4 cups cooked quinoa or brown rice
Instructions
- Preheat your oven to 400°F (200°C). Toss sweet potatoes and broccoli in 2 tablespoons of olive oil, season with salt and pepper, and roast for 25-30 minutes.
- In a large bowl, combine ground beef, Dijon mustard, Worcestershire sauce, salt, pepper, egg, Panko breadcrumbs, basil, paprika, oregano, and minced garlic. Mix gently and roll into 1-inch balls.
- Brown the meatballs in a skillet over medium heat for about 5-7 minutes.
- Mix barbecue sauce, balsamic vinegar, tamari, and water in a bowl. Pour over browned meatballs in the skillet, cover, and simmer for 10-15 minutes.
- Blend avocado, Greek yogurt, lime juice, minced garlic, sea salt, and fresh herbs until smooth and creamy for the avocado sauce.
- Assemble bowls with quinoa or brown rice, top with roasted veggies, meatballs, and avocado sauce.
Notes
Don’t over-mix the meatball ingredients, experiment with different veggies, and prepare the meatballs and sauce in advance for added convenience.
