Description

A hearty and nutritious BBQ Chicken Sweet Potato Bowl that combines the sweetness of roasted sweet potatoes with smoky BBQ chicken and fresh toppings.


Ingredients

  • 2 large sweet potatoes
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup BBQ sauce
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, canned, or frozen)
  • 1/4 cup red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes, then pierce them several times with a fork.
  3. Place the sweet potatoes on a baking sheet, rub with olive oil, sprinkle with salt and pepper, and bake for about 40-45 minutes.
  4. While the sweet potatoes are baking, season the chicken breasts with salt and pepper.
  5. Heat olive oil in a skillet over medium heat, then add the chicken and cook until golden brown on both sides, about 6-7 minutes per side.
  6. Remove chicken from the skillet, let it rest, then dice into bite-sized pieces and toss with BBQ sauce.
  7. In a small bowl, mix black beans and corn together.
  8. Once sweet potatoes are done, slice them open and fluff the insides with a fork.
  9. Assemble each bowl by adding half of a baked sweet potato, topping with BBQ chicken, black bean and corn mixture, red onion, avocado, and cilantro.
  10. Serve with lime wedges on the side.

Notes

For the best flavor, use ripe avocados and adjust the BBQ sauce sweetness to your preference. Feel free to customize toppings.
