Description
A hearty and nutritious BBQ Chicken Sweet Potato Bowl that combines the sweetness of roasted sweet potatoes with smoky BBQ chicken and fresh toppings.

- 2 large sweet potatoes
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup BBQ sauce
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels (fresh, canned, or frozen)
- 1/4 cup red onion, finely chopped
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dry the sweet potatoes, then pierce them several times with a fork.
- Place the sweet potatoes on a baking sheet, rub with olive oil, sprinkle with salt and pepper, and bake for about 40-45 minutes.
- While the sweet potatoes are baking, season the chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat, then add the chicken and cook until golden brown on both sides, about 6-7 minutes per side.
- Remove chicken from the skillet, let it rest, then dice into bite-sized pieces and toss with BBQ sauce.
- In a small bowl, mix black beans and corn together.
- Once sweet potatoes are done, slice them open and fluff the insides with a fork.
- Assemble each bowl by adding half of a baked sweet potato, topping with BBQ chicken, black bean and corn mixture, red onion, avocado, and cilantro.
- Serve with lime wedges on the side.
Notes
For the best flavor, use ripe avocados and adjust the BBQ sauce sweetness to your preference. Feel free to customize toppings.
