- 2 medium sweet potatoes, diced
- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 1 red onion, sliced
- 1 cup corn, frozen or fresh
- 1 cup cheddar cheese, shredded
- 1 tablespoon olive oil
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon smoked paprika
- Green onions, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced sweet potatoes, salt, pepper, and smoked paprika. Cook until tender, about 10-15 minutes, stirring occasionally.
- Add the sliced red onion and corn to the skillet. Stir and cook for another 5 minutes until the onion is soft.
- Stir in the shredded chicken and pour in the BBQ sauce. Mix until well combined and heated through, about 5 minutes.
- Sprinkle cheddar cheese over the top, cover, and cook for an additional 3-5 minutes until the cheese is melted. Serve hot, garnished with chopped green onions.
Notes
