Description

A delicious one-pan meal combining tender sweet potatoes and juicy BBQ chicken, making it perfect for busy weeknights or casual family gatherings.


Ingredients

  • 2 medium sweet potatoes, diced
  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 1 red onion, sliced
  • 1 cup corn, frozen or fresh
  • 1 cup cheddar cheese, shredded
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon smoked paprika
  • Green onions, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced sweet potatoes, salt, pepper, and smoked paprika. Cook until tender, about 10-15 minutes, stirring occasionally.
  2. Add the sliced red onion and corn to the skillet. Stir and cook for another 5 minutes until the onion is soft.
  3. Stir in the shredded chicken and pour in the BBQ sauce. Mix until well combined and heated through, about 5 minutes.
  4. Sprinkle cheddar cheese over the top, cover, and cook for an additional 3-5 minutes until the cheese is melted. Serve hot, garnished with chopped green onions.

Notes
