Instructions
- In a large skillet, cook the ground beef with the diced onion and minced garlic over medium heat until the beef is browned. Drain excess fat.
- Stir in chili powder, cumin, salt, and pepper, ensuring the beef is well-seasoned.
- In a separate pot, cook the tortellini according to the package instructions. Drain and set aside.
- Add the red enchilada sauce and cream cheese to the beef mixture. Stir until creamy and smooth.
- Gently fold the cooked tortellini into the beef and sauce mixture.
- Sprinkle the shredded mozzarella cheese over the top, cover, and let melt for 2-3 minutes.
- Garnish with fresh cilantro and serve warm.
Notes
For a spicier kick, consider adding diced jalapeños or a splash of hot sauce. Ensure cream cheese is at room temperature for easier mixing.
