Description

Ingredients

  • 2 pounds beef chuck, cut into chunks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 bell peppers, chopped
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups beef broth
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Cooked rice or bread for serving

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until softened, about 4-5 minutes.
  3. Toss in the beef chunks and brown them on all sides.
  4. Stir in the sliced carrots, chopped bell peppers, diced tomatoes, beef broth, paprika, cumin, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low.
  6. Cover the pot and let it simmer for 90 to 120 minutes, or until the beef is fork-tender.
  7. Serve the goulash over rice or with crusty bread.
