- 2 pounds beef chuck, cut into chunks
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 bell peppers, chopped
- 1 can (14.5 ounces) diced tomatoes
- 2 cups beef broth
- 2 teaspoons paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Cooked rice or bread for serving
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened, about 4-5 minutes.
- Toss in the beef chunks and brown them on all sides.
- Stir in the sliced carrots, chopped bell peppers, diced tomatoes, beef broth, paprika, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low.
- Cover the pot and let it simmer for 90 to 120 minutes, or until the beef is fork-tender.
- Serve the goulash over rice or with crusty bread.
