- 2 tablespoons olive oil
- 1 pound beef sirloin, thinly sliced
- 2 tablespoons butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 ounces cremini mushrooms, sliced
- 2 tablespoons all-purpose flour
- 1 cup beef broth
- 1 teaspoon Dijon mustard
- 3/4 cup sour cream
- Salt and pepper to taste
- 12 ounces egg noodles, cooked (or mashed potatoes for serving)
- Chopped parsley for garnish (optional)
Instructions
- Heat olive oil in a skillet over medium-high heat and sear the beef in batches until just browned. Set aside to rest.
- In the same skillet, melt the butter and add chopped onions, cooking until softened (about 3–4 minutes).
- Add the mushrooms and cook until golden brown, then stir in the minced garlic for 1 more minute.
- Sprinkle flour over the vegetables and mix well. Slowly pour in the beef broth while stirring to avoid lumps. Add Dijon mustard and simmer until slightly thickened.
- Reduce heat to low and add sour cream, stirring until well combined without boiling.
- Return the beef to the pan, stirring to coat with sauce and heat through.
- Serve over cooked egg noodles or mashed potatoes, garnished with parsley if desired.
Notes
For best results, allow the beef to rest after searing and avoid high heat after adding sour cream.
