- 2 cups crushed graham crackers
- 1/2 cup melted butter
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup fresh strawberries, pureed
- 1 cup fresh strawberries, sliced for topping
- 1/4 cup sugar for sauce
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 325°F (160°C).
- Combine crushed graham crackers and melted butter to form the crust. Press the mixture into the bottom of a springform pan.
- Beat the cream cheese and sugar until smooth. Add the vanilla extract, followed by the eggs one at a time, mixing well after each addition.
- Folding in the pureed strawberries until just combined.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for about 45-50 minutes, or until the center is set and barely jiggly.
- Make the strawberry sauce by combining sliced strawberries, sugar, and lemon juice in a saucepan. Cook over medium heat until the strawberries release their juices and the sauce thickens slightly.
- Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight.
- Serve chilled, topped with strawberry sauce.
