Ingredients

  • 4 pounds bone-in, skin-on chicken pieces
  • 2 cups fresh or frozen cranberries
  • 1/2 cup maple syrup or honey
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 3 cloves garlic, minced
  • 1 tablespoon chopped rosemary
  • 1 tablespoon chopped thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F and grease a large baking dish.
  2. Pat the chicken dry and rub with olive oil; season with salt, pepper, rosemary, thyme, and garlic.
  3. Scatter cranberries in the baking dish; pour orange juice and maple syrup (or honey) over cranberries.
  4. Nestle chicken pieces skin-side up among the cranberries.
  5. Bake for 35-45 minutes until the internal temperature reaches 165°F.
  6. Let the dish rest for 5 minutes before serving with cranberry sauce spooned over the chicken.
