- 2 sticks (1 cup) Butter, softened
- 1/2 cup Granulated sugar
- 2 cups All-purpose flour
- 1/4 tsp Salt
- 4 Large eggs
- 1 1/2 cups Granulated sugar
- 1/4 cup All-purpose flour
- 2/3 cup Fresh lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper.
- Pulse the softened butter, 1/2 cup sugar, 2 cups flour, and salt in a food processor until fine crumbs form.
- Press the dough firmly into an even layer across the bottom of the prepared baking dish.
- Bake the crust for about 15-18 minutes, or until the edges turn a light golden brown and let it cool for approximately 15 minutes.
- Whisk together the eggs and 1.5 cups sugar until smooth. Add in 1/4 cup flour and mix until there are no lumps, then stir in the fresh lemon juice.
- Pour the lemon mixture over the slightly cooled crust, spreading it evenly.
- Bake the layered bars for an additional 30 minutes, or until the filling is set and doesn’t jiggle in the center.
- Allow the bars to cool in the pan at room temperature for about an hour. Cover and refrigerate for at least 2 hours.
- Slice into squares and dust with powdered sugar before serving.
Notes
For best flavor, chill overnight and use fresh lemon juice. Mix in additional flavors like zest for variety.
