Delightful lemon bars with a crumbly buttery crust and smooth zesty lemon filling, perfect for any occasion.


Ingredients

  • 2 sticks (1 cup) Butter, softened
  • 1/2 cup Granulated sugar
  • 2 cups All-purpose flour
  • 1/4 tsp Salt
  • 4 Large eggs
  • 1 1/2 cups Granulated sugar
  • 1/4 cup All-purpose flour
  • 2/3 cup Fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper.
  2. Pulse the softened butter, 1/2 cup sugar, 2 cups flour, and salt in a food processor until fine crumbs form.
  3. Press the dough firmly into an even layer across the bottom of the prepared baking dish.
  4. Bake the crust for about 15-18 minutes, or until the edges turn a light golden brown and let it cool for approximately 15 minutes.
  5. Whisk together the eggs and 1.5 cups sugar until smooth. Add in 1/4 cup flour and mix until there are no lumps, then stir in the fresh lemon juice.
  6. Pour the lemon mixture over the slightly cooled crust, spreading it evenly.
  7. Bake the layered bars for an additional 30 minutes, or until the filling is set and doesn’t jiggle in the center.
  8. Allow the bars to cool in the pan at room temperature for about an hour. Cover and refrigerate for at least 2 hours.
  9. Slice into squares and dust with powdered sugar before serving.

Notes

For best flavor, chill overnight and use fresh lemon juice. Mix in additional flavors like zest for variety.
