- 1 lb ground beef or Italian sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 cups uncooked lasagna noodles, broken into pieces
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups fresh spinach
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Grated Parmesan cheese for topping
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the ground meat and cook until browned. Drain excess fat, if necessary.
- Add the chopped onion and minced garlic to the pot. Sauté until the onion is tender and translucent.
- Stir in the crushed tomatoes, chicken or vegetable broth, broken lasagna noodles, basil, oregano, salt, and pepper. Bring this delicious mixture to a boil.
- Reduce heat and let it simmer for about 15 minutes, or until the noodles are cooked al dente.
- Add the fresh spinach, ricotta cheese, and half of the mozzarella cheese. Stir until the spinach wilts and the cheese is melted.
- Serve hot, garnished with the remaining mozzarella and a sprinkle of Parmesan cheese.
Notes
For a vegan option, substitute meat with chickpeas or lentils and use plant-based cheeses. Can be made gluten-free by using gluten-free pasta alternatives.
