- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 3 cups diced apples (peeled and cored)
- 1 teaspoon vanilla extract
- 8 oz cream cheese (softened)
- 4 cups powdered sugar
- 1/2 cup unsalted butter (softened)
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a bowl, mix together flour, baking soda, baking powder, salt, and cinnamon.
- In another bowl, beat together granulated sugar, brown sugar, and oil until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla and diced apples.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Pour batter into the prepared pan.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- To make the cream cheese frosting, beat together cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until well combined.
- Once the cake has cooled, spread the cream cheese frosting on top.
- Serve and enjoy!
