Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat, cook the chicken for 5-7 minutes on each side until golden brown. Remove and set aside.
  3. In a separate saucepan, bring chicken broth to a boil, add rice, lower heat, cover, and simmer for 15-20 minutes.
  4. In the same skillet, melt butter over medium heat, whisk in flour to create a roux, then gradually add milk while whisking until smooth. Stir in spices and cheeses until melted.
  5. Return the chicken to the skillet, spoon sauce over it, and serve hot over the rice.
