- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tablespoons unsalted butter
- 1 ½ cups whole milk
- ½ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
Instructions
- Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat, cook the chicken for 5-7 minutes on each side until golden brown. Remove and set aside.
- In a separate saucepan, bring chicken broth to a boil, add rice, lower heat, cover, and simmer for 15-20 minutes.
- In the same skillet, melt butter over medium heat, whisk in flour to create a roux, then gradually add milk while whisking until smooth. Stir in spices and cheeses until melted.
- Return the chicken to the skillet, spoon sauce over it, and serve hot over the rice.
Notes
Use freshly grated cheese for a smoother melt and ensure chicken reaches an internal temperature of 165°F.
