- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tablespoons unsalted butter
- 1 ½ cups whole milk
- ½ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
Instructions
- Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
- In a skillet, heat olive oil and cook the chicken for 5-7 minutes on each side until golden brown.
- Remove the chicken and in a saucepan, bring chicken broth to boil, add rice, cover, and simmer for 15-20 minutes.
- Melt butter in the skillet, whisk in flour, then gradually add milk until smooth. Stir in spices and cheeses.
- Return chicken to skillet, spoon creamy sauce over chicken and serve hot over rice.
Notes
Allow the chicken to brown well for a deeper flavor. Use homemade broth for better taste.
