- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tablespoons unsalted butter
- 1 ½ cups whole milk
- ½ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
Instructions
- Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat, cook seasoned chicken for about 5-7 minutes on each side until golden brown, then set aside.
- In a saucepan, bring chicken broth to a boil, add rice, reduce heat, cover, and simmer for 15-20 minutes until done.
- Melt butter in the skillet, whisk in flour to create a roux, then gradually add milk while whisking until smooth. Stir in spices and cheeses until melted.
- Return chicken to skillet, spoon sauce over, and warm together for a couple of minutes. Serve hot over rice.
Notes
For a thicker sauce, simmer longer. Rinse rice before cooking for fluffiness. Can use different cheeses based on preference.
