- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tablespoons unsalted butter
- 1 ½ cups whole milk
- ½ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
Instructions
- Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat and cook the seasoned chicken for about 5-7 minutes on each side until golden brown. Remove and set aside.
- In a separate saucepan, bring chicken broth to a boil. Add a pinch of salt and stir in the rice. Cover and simmer for 15-20 minutes until tender.
- In the skillet, melt the butter and whisk in flour to make a roux. Gradually add whole milk while whisking, then stir in spices and cheeses until melted.
- Return the chicken to the skillet, spoon the creamy sauce over it, and reheat slightly before serving over rice.
Notes
Use freshly grated cheese for better texture and flavor. Adjust the thickness of the sauce by simmering longer if desired.
