- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tablespoons unsalted butter
- 1 ½ cups whole milk
- ½ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
Instructions
- Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat and cook the chicken for 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
- In a saucepan, bring chicken broth to a boil. Add salt and rice, reduce heat, cover, and simmer for 15-20 minutes until rice is tender.
- In the same skillet, melt butter over medium heat, whisk in flour to create a roux, then slowly pour in the milk while whisking until smooth. Stir in spices and both cheeses until melted and creamy.
- Return chicken to the skillet, spoon sauce over the chicken, and let it simmer briefly. Serve hot over rice and enjoy.
