- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tablespoons unsalted butter
- 1 ½ cups whole milk
- ½ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- Garlic powder, to taste
- Onion powder, to taste
- Smoked paprika, to taste
- Salt, to taste
- Pepper, to taste
- Olive oil, for cooking
Instructions
- Start by generously seasoning the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat and cook the seasoned chicken for about 5-7 minutes on each side until golden brown and cooked through.
- In a saucepan, bring chicken broth to a boil, add a pinch of salt, then add the rice, reduce heat to low, cover, and simmer for about 15-20 minutes until fluffy.
- In the same skillet, melt butter, whisk in flour to make a roux, then slowly add milk while whisking to keep the sauce smooth. Stir in spices and both cheeses until melted and creamy.
- Return the chicken to the skillet, spoon the cheese sauce over it, and serve hot over the rice.
Notes
Don’t lift the lid while cooking rice. For variation, swap chicken with tofu for a vegetarian option.
