- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tablespoons unsalted butter
- 1 ½ cups whole milk
- ½ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
Instructions
- Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat and cook the seasoned chicken for 5-7 minutes on each side until golden brown. Remove chicken and set aside.
- In a separate saucepan, bring chicken broth to a boil, add a pinch of salt, and stir in the rice. Cover and simmer for 15-20 minutes until tender.
- In the same skillet, melt butter over medium heat, whisk in flour to form a roux, then gradually add whole milk while whisking until smooth. Stir in spices and both cheeses until melted and creamy.
- Return chicken to the skillet, spoon sauce over it, and heat through for a few minutes. Serve hot over the cooked rice.
Notes
For extra flavor, consider marinating the chicken beforehand. Use quality chicken broth for the best taste.
