Ingredients

- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/4 cup molasses
- 1/4 cup honey
- 1 tablespoon vanilla extract
Instructions
- In a bowl, mix together flour, ginger, cinnamon, cloves, nutmeg, and salt.
- In another bowl, cream together the butter and brown sugar until fluffy.
- Add molasses, honey, and vanilla extract, mixing until combined.
- Gradually add the dry ingredients, mixing until just combined.
- Roll the dough thick and chill for at least 2 hours.
- Preheat the oven to 350°F (175°C).
- Cut out cookie shapes and place them on a baking sheet.
- Bake for 10-12 minutes until edges are firm.
- Allow to cool before decorating with icing.
Notes
Chill the dough well and use fresh spices for the best flavor. Adjust thickness for softer or crispier cookies.
