Description

A hearty and filling soup combining black beans and lentils with spices, perfect for chilly evenings.


Ingredients

  • 1 cup dried black beans
  • 1 cup dried lentils
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1 bay leaf
  • 4 cups vegetable broth
  • 2 cups water
  • 1 can (14.5 ounces) diced tomatoes
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Rinse the black beans and lentils under cold water to clean them.
  2. Transfer the cleaned beans and lentils to a large bowl and soak them in water for at least 6 hours or overnight.
  3. After soaking, drain the beans and lentils and set aside.
  4. In a large pot, heat the olive oil over medium heat. Sauté the chopped onion for 5-7 minutes until translucent and golden.
  5. Add the minced garlic and cook for an additional 1-2 minutes.
  6. Toss in the chopped carrot and celery, cooking for another 5 minutes until slightly tender.
  7. Stir in spices: ground cumin, smoked paprika, turmeric, black pepper, and salt. Cook for about a minute.
  8. Add the bay leaf, vegetable broth, and water. Bring to a boil.
  9. Stir in the diced tomatoes and then add the drained beans and lentils, mixing everything together.
  10. Cover and simmer for 45-60 minutes until the beans and lentils are tender, stirring occasionally.
  11. If the soup thickens too much, add more water as needed.
  12. Remove the bay leaf and stir in lime juice and chopped cilantro. Taste and adjust seasonings as needed.
  13. Serve hot with additional cilantro if desired.

Notes

Soaking the beans reduces cooking time, and can use canned beans for a quicker option. The soup can be customized with various spices or vegetables.
